If you have worked with us this year, you already know that Dellosa & Co. is a family business at heart. A lot of our ideas start at our dinner table. It is the place where we talk through work, life, the wild energy of two young kids, and the future we are trying to build. It is also the place where we slow down and connect, even on the busiest weeks.
More nights than we can count, pasta has been the unofficial fuel of our home. It is simple, comforting, and it gives us an excuse to sit together a little longer. David usually takes it one step further and whips up a quick homemade garlic spread to toast on ciabatta or Italian bread. He will be the first to tell you that garlic bread is a severely underrated food and should probably be on the table more often than it is.
So when we thought about what we wanted to send as a holiday gift, this felt right. A small piece of something real from our home to yours.
As we close out our first year of Dellosa & Co., we feel an enormous amount of gratitude. Every conversation, every idea you trusted us with, and every chance you gave us to help you grow has shaped this year in ways we will never forget. We built something meaningful in 2025, and you were a big part of it.
To celebrate, we wanted to share two of the pasta dishes that became our go-to this year. They are simple, warm, and perfect for winter nights. We hope they give you a moment to slow down and enjoy time around your own table.
Pasta Aglio e Olio
A staple in our house. Quick, bold, and loaded with flavor.
Ingredients
• Spaghetti
• Olive oil
• Aglio e Olio herb blend
• Sea salt with lemon
• Crushed red pepper (optional, but a must for Hadley and Ashley right now)
• Fresh parsley (optional)
How to make it
Bring a pot of salted water to a boil. A pinch of the sea salt with emon adds a bright lift. Cook the pasta until it has a little bite to it.
In a pan, warm a generous pour of olive oil. Add the Aglio e Olio herb blend and let it bloom for a moment. The garlic aroma will hit the kitchen right away (it's magical). Add crushed red pepper to taste, or generously if you are cooking for Hadley and Ashley.
Transfer the cooked pasta straight into the pan. Toss until everything glistens. Add a splash of pasta water to help it come together. Finish with another pinch of the lemon sea salt and fresh parsley if you have it.
It is simple, fast, and always hits the spot.
Pasta and Marinara
The easiest weeknight dinner and the most common meal on our table.
Ingredients
• Your pasta of choice (kids have loved cavatappi recently)
• Marinara pasta sauce with basil
• Olive oil
• Oregano flowers
• Sea salt with lemon
• Parmesan (the more the better for Beckett)
How to make it
Boil your pasta in salted water. Again, a pinch of the sea salt with emon brings more depth than regular salt.
Warm the marinara in a pan over low heat, drizzling in a small amount of olive oil. Once heated through, add a touch of the oregano flowers. They bring a softer, more aromatic flavor than dried oregano and turn a simple sauce into something special.
Add the pasta to the pan and toss well. Finish with parmesan or vegan parmesan, generously if Beckett is anywhere nearby. Serve with bread or nothing at all.
It is cozy, familiar, and the kind of meal that makes everyone slow down.
